What’s for dinner? That question is asked every single day here. Without fail. No one wants to be surprised by what I plan for dinner, they want instant information on what’s going to be on their plates. We eat a lot of chicken, it’s just so versatile and is truly a blank canvas when it comes to cooking with it. So, when I tell my family, “chicken is for dinner”, they all groan.

Seriously, they groan.

I never tell them what I am doing with the chicken so when I make this Easy Baked Bruschetta Chicken they are ALL happy! Why? Because it’s so good. The flavors of the bruschetta mixture, the melted mozzarella cheese, and the seasoned chicken breast all are simply perfect together. It’s one of our favorite chicken recipes.

Easy Baked Bruschetta Chicken

This bruschetta chicken bake recipe couldn’t be easier to make and bakes up in less than 40 minutes! It’s low-carb goodness, and takes bruschetta to a whole new level!

Tomato bruschetta is typically served over toasted or grilled bread slices, but for this recipe, chicken replaces the bread to serve as a main dish, not an appetizer.

I used a variety of grape tomatoes for the bruschetta just to give it some extra color. I also used sweet basil but have used Thai basil in this recipe to change it up. It’s also important to have a good balsamic vinegar and it doesn’t have to be expensive to be good. I like to use Pompeian brand.

While I baked the chicken, you can grill it and it turns out wonderfully tender and juicy as well. Grilling will take a few minutes less, depending on the thickness of your chicken.

Whether you use sliced mozzarella or shredded, as I do for this recipe, you’ll love the flavors of the tomato mixture with the melted cheese and chicken. I change up how I season the chicken with what I have in the spice cabinet or what I’m feeling. On this particular day, I used a Zesty Italian seasoning from FlavorGod. It’s got a bit of just about everything. Their pizza seasoning is also amazing with this recipe. Simple Italian seasoning works well, as does Old Bay.

Ingredients

  • 4 chicken breasts
  • 2 tablespoons of FlavorGod Zesty Italian seasoning (or Italian seasoning)
  • 3/4 cup shredded mozzarella

For the bruschetta:

  • 1 ½ cups grape tomatoes, halved
  • 3 cloves garlic, minced
  • ½ small red onion, chopped
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon olive oil
  • ½ cup chopped fresh basil
  • ½ teaspoon salt

How to Make This Easy Bruschetta Chicken

Step 1

In a medium mixing bowl, combine the fresh tomatoes, minced garlic, diced red onion, balsamic vinegar, olive oil, basil, and salt. Mix until combined. Set aside.

Step 2

Preheat the oven to 425 degrees F. Spray a 13×9 inch baking pan with nonstick spray.

Step 3

Season both sides of the chicken breasts with zesty Italian seasoning. Place chicken in the baking pan.

Step 4

Bake chicken in the oven for 25-30 minutes, or until chicken is done (reaches 165 degrees when tested with a meat thermometer).

Step 5

Remove chicken from the oven. On top of the chicken breasts add the shredded cheese. Top each chicken breast with one-fourth of the bruschetta mixture. Place chicken back in the oven for 5 minutes, or until cheese is melted.

Step 6

Remove the baking dish from the oven and serve.

Tips, Tricks, and FAQs

  • Substitute halved cherry tomatoes or dice about 4-6 Roma Tomatoes in place of the grape tomatoes.
  • Use boneless, skinless chicken thighs in place of the breasts. You may need to increase the cooking time by a few minutes. Check at the 25-30 minute mark. The internal temperature needs to be 165 degrees.
  • Italian seasoning can be used in place of the zesty Italian.
  • Slices of mozzarella cheese can be used in place of the shredded cheese.
