My family loves chicken and that means it’s up to me to find different ways to serve or else it will become boring. They love this grilled chicken skewers recipe and they enjoy this Spicy Maple Glazed Grilled Chicken Breasts as well. One of my daughters loves spicy foods and this Nashville Hot Grilled Chicken Tenders recipe is a favorite. But she really enjoyed this kabob recipe as the seasoning has all the flavors of fajitas and a little kick. They’re a great meal to serve at BBQs, summer gatherings, and for dinner any night of the week.
Grilled Chicken Kabobs with Everything Seasoning
The Everything Seasoning isn’t what you may know it to be, it’s a wonderful blend of herbs and spices that includes onion, garlic, cumin, and paprika. It combines savory and smoky notes from Flavor God and is a perfect seasoning for kabobs. This seasoning isn’t to be confused with this Everything Bagel Seasoning Recipe as it’s two different flavor profiles.
Because the seasoning reminds me of my homemade fajita seasoning, I wanted to make the grilled chicken and vegetable skewers with ingredients that are used in fajitas: peppers, onions, chicken, and seasoning. After using this blend of spices many times, I decided it was time I created my Flavor God Everything Seasoning Copycat Recipe. It’s just one of my homemade seasoning recipes that I use.
There isn’t a marinade so this recipe comes together quick. I like to grill the skewers but they be made in the oven and even using a grill pan on the stovetop.
Timesaving Tips and Variations
- Be sure to cut the vegetables and chicken into similar size pieces for even cooking.
- You can substitute boneless skinless chicken thighs for the chicken breasts.
- Use whatever color of bell peppers you like or even add hot peppers for more spice.
- If you use wood skewers, soak them for at least 30 minutes before grilling. You don’t want to burn the skewers.
- The recipe calls for red onion, but yellow, white, or sweet onion works great.
- Other vegetables can be added like cherry tomatoes, zucchini, yellow squash, whole mushrooms, or even baby potatoes.
- Make ahead of time: assemble the kabobs and place them in a covered container in the refrigerator until needed. While the grill or oven is preheating, take the chicken sticks out to come to room temperature.
- We like to serve them over white rice with a little salsa.
Enjoy these delicious grilled chicken kabobs! Remember to prep the skewers beforehand, use your favorite vegetables, and serve with your favorite sides like this wild rice pilaf.
The colorful presentation and flavorful taste make these kabobs a hit with kids and adults alike. Kabobs are for picky eaters too, just use foods that they will eat and love.
Do you have to soak skewers before grilling kabobs?
If you are using wooden skewers they need to be soaked in water for about 30 minutes before grilling to prevent them from burning or catching fire. When you use metal skewers there’s no need to soak them before adding the ingredients.
What other vegetables are good for chicken kabobs?
Cherry tomatoes, zucchini, yellow squash, whole mushrooms, or even baby potatoes are all great choices. You can even add fresh pineapple chunks.
What to Serve with Kabobs
You can serve different sides with kabobs, here are a few suggestions that all are delicious.
- Cucumber, Tomato, and Avocado Salad
- Chicken Broth Rice
- Puff Pastry Wrapped Asparagus Bundles
- Perfect Crispy Dijon Roasted Potatoes
- Grilled Pineapple with Maple Syrup Glaze
By choosing one of these side dishes or countless others, you can create a complete and delightful meal that pairs nicely with the flavors of your grilled chicken kabobs.
What to do with Leftover Kabobs?
Leftovers can be removed from skewers and stored in an airtight container in the refrigerator for up to 3 days. You can reheat them in the microwave for a few minutes. Cherry tomatoes and mushrooms do not reheat well.
Use the leftover kabobs in a salad or serve over some rice. Slice the chicken a bit and use all the leftover ingredients to make a sandwich. Get creative!

How to Make Grilled Chicken Kabobs with Everything Seasoning
Preheat your grill to medium-high heat. Cut your vegetables and chicken into similar-sized one-inch pieces. Measure out the seasoning. I love these nesting measuring cups.
Combine the four tablespoons of Everything Seasoning with the 4 tablespoons of olive oil in a small bowl. Use half to drizzle over the chicken pieces and toss to coat all sides. Drizzle the remaining half over the vegetables and toss to coat.
Assemble your kabobs using metal skewers. IF you are using bamboo skewers, don’t forget to soak them in water for at least 30 minutes before using them on the grill. This will help them not burn.
