One pan meals are great, in fact, they are the best ever. What’s even better than a one skillet meal is easy clean up and if the meal cooks up quickly. The weather is getting warmer and turning the oven on is really the last thing I want to do. Which is why I love this easy one pan Cajun Shrimp and Sausage Vegetable Skillet.

This sausage and shrimp skillet recipe uses fresh shrimp and vegetables, Cajun sausage, and a homemade Cajun seasoning mix that can be used in a variety of recipes.

This delicious shrimp skillet meal is not only healthy, but it’s also Paleo, and for my family, it’s a great addition to our menu. I try to stick to Paleo as much as possible, but it’s a bit hard with the rest of the family not so fond of giving up the foods they enjoy. Recipes like this one gives us the meal we want and I can add rice for the rest of the family.

Simple ingredients go into this spicy meal, but if you’re not one for spicy foods – no worries. You can make the Cajun seasoning to your heat level and use your favorite sausage. One Pan Cajun Shrimp and Sausage Vegetable Skillet can also be adapted to use vegetables you have on hand. Use green beans, asparagus, or even broccoli.

Ingredient List

  • jumbo shrimp
  • Cajun Andouille sausage
  • Onion
  • 2-3 large cloves garlic, minced
  • Bell peppers
  • Homemade Cajun seasoning
  • Yellow squash
  • Zucchini

Instructions to Make Cajun Shrimp and Sausage Skillet

Prepare the Cajun seasoning by combining all ingredients together in a bowl. Stir to combine and transfer to an airtight container. Set aside.

Toss the shrimp with one tablespoon olive oil and 1/2 tablespoon Cajun seasoning. Set aside.

Heat a large skillet over medium heat and add the Andouille sausage. Cook, stirring occasionally, until the sausage is browned, approximately 4-5 minutes. Transfer sausage to a plate and set aside.

Heat one tablespoon olive oil in the skillet, along with the seasoned shrimp. Spread the shrimp into a single layer without overcrowding. Cook, stirring once, just until the shrimp is opaque and starts to curl, approximately 2 minutes. Do not overcook. Transfer shrimp to the plate with the sausage.

In the skillet add the remaining tablespoon of olive oil. Add in the onion, garlic, and the diced bell pepper. Sprinkle with additional Cajun seasoning, to taste, and stir to combine. Cook, stirring frequently, until the vegetables soften and develop some color, approximately 4-5 minutes.

Then add in the yellow squash and zucchini to the skillet and cook, stirring frequently, just until browned and crisp tender, approximately 2-3 minutes. Remove from heat and stir in the Andouille sausage, shrimp, and fresh parsley. Stir to combine and serve immediately.

Ingredients

Cajun Seasoning Ingredients

  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • 1/2 tablespoon onion powder
  • 2 teaspoons oregano
  • 1 teaspoon thyme
  • 2 teaspoons cayenne pepper
  • 1 teaspoon white pepper (black pepper works great, too)
  • 2 teaspoons fine sea salt

Skillet Ingredients

  • 1 pound jumbo shrimp, peeled and deveined
  • 3 tablespoons olive oil, divided
  • 3 3 ounces Cajun Andouille sausage links, sliced
  • 1/2 medium white onion, diced
  • 1 green bell pepper, diced
  • 1 orange bell pepper (or red), diced
  • 2 – 3 cloves garlic, minced
  • 1 – 2 tablespoons homemade Cajun seasoning, divided
  • salt and pepper, to taste
  • 1 small yellow squash, sliced and cut into half rounds
  • 1 small zucchini, sliced and cut into half rounds

Instructions

  • Prepare the Cajun seasoning by combining all ingredients together in a bowl. Stir to combine and transfer to an airtight container. Set aside.
