Slow Cooker Mashed Potatoes are so easy to make and frees up valuable stove-top space. Perfect to make for a potluck and holiday dinners.
During the holidays my stove and oven get used more than I care to think about. Coordinating the times to ensure the meal is done on time can be tricky and a headache. I love to use my slow cookers to help save valuable oven and stove-top space. Family favorites like Cheesy Green Bean Casserole and my sister-in-law’s Mac and Cheese recipes are standard to have on Thanksgiving and Christmas. Both made in the slow cooker to save space in the oven for the turkey or ham. I even bake the rolls in the slow cooker, yes you read that right.
So, it was a no-brainer to make these creamy and rich mashed potatoes in the slow cooker for this past Thanksgiving. I don’t even know why I had never thought to do so before! Such a time-saver!
Slow Cooker Mashed Potatoes
This recipe couldn’t be simpler to make. A little prep work and then you can easily forget about the potatoes for a few hours returning to perfectly cooked potatoes ready to be mashed. There is no butter in this recipe, the creaminess comes from the cream cheese and sour cream added to the cooked potatoes. However, I like to add a bit of butter when I serve them, it just makes the potatoes even better. This is optional.
Using the crock pot to make mash potatoes means you can keep them warm for a longer period of time. Plus, there is no boiling water and draining the potatoes.
You can easily leave some of the potatoes “chunky” if you are into that sort of thing. I grew up with chunky mashed potatoes, but my husband did not. Using an immersion blender (this one is my favorite) in the slow cooker is the perfect gadget for mashing the potatoes to your liking.
Which Potatoes are Best for Mashed Potatoes?
Russet or Yukon Gold potatoes are the best for mashed potatoes. They both result in creamy mashed potatoes. Red potatoes are also a good choice.
Ingredients
- russet potatoes
- chicken broth or stock
- Salt and black pepper
- garlic powder
- cream cheese
- sour cream
- milk
How to Make Slow Cooker Mashed Potatoes
Step 1
For easy clean up, I like to spray the slow cooker with nonstick cooking spray. Then you will add your chopped potatoes and chicken stock to the slow cooker. Season the potatoes with garlic powder, salt, and black pepper. Cover the slow cooker and cook on low for 5 to 6 hours or high for 3 to 4 until the potatoes are tender.
Step 2
Using an immersion blender or potato masher, puree the potatoes.
Step 3
Add the cream cheese and sour cream, stirring until well blended. Add milk to reach your desired consistency.
Tips, Tricks, and FAQs
- If you want to add cheese, do that when you are mashing the potatoes so it will melt into the potatoes.
- Keep the mashed potatoes warm by leaving the slow cooker on low. If your slow cooker has a warm setting, use that.
