This Slow Cooker Chicken and Potatoes with Green Beans appears on the menu at least monthly in our house. It uses simple ingredients that are always on my grocery list and it’s super easy to prep.

This Slow Cooker Chicken and Vegetable feast uses wholesome ingredients and a 6-quart slow cooker. I like to brown the chicken in a skillet before adding to the slow cooker but that step is totally optional. I have skipped the browning step many times. It’s more of visual thing. When cooking chicken in the crockpot, it comes out looking rather plain but it is seasoned well and tastes amazing. It really is a personal preference so I will share the recipe with the extra step as being optional.
The key to this recipe is to make sure the potatoes are all cut to the same size so they cook evenly without some being overcooked or still a bit hard. As for the fresh green beans, I like to keep them whole so they still have a bit of a crispness to them. If you prefer the beans softer, you can cut them in half before adding them to the slow cooker.
The slow cooker does its magic and melds all the flavors beautifully, creating a comforting, delicious, and healthy meal.
Can I use lemon juice from a bottle?
No, I don’t recommend bottled lemon juice for this recipe. I suggest using fresh lemon juice as it will give the recipe a more fresh citrusy taste. That being said, if you have the bottled lemon juice, I would go ahead and use it but keep in mind the taste may be off a little.
Can I use other vegetables besides green beans?
Yes, you can use other vegetables. I don’t recommend using frozen vegetables unless you add them in the last 30 or 45 minutes of cooking so they don’t get mushy. Here are a few other suggestions:
- fresh broccoli
- baby carrots
- pearl onions
- fresh or canned corn
- fresh asparagus
- sliced bell peppers (add the last 45 minutes so they don’t overcook)
How long does it take to cook chicken in the slow cooker?
If you’re cooking chicken in the slow cooker on LOW, it will take 4 – 6 hours, depending on the slow cooker you have. Cooking the chicken on HIGH will take about 2 – 4 hours, again that depends on the slow cooker. I recommend you use a meat thermometer to make sure the chicken is at 165 degrees before serving.

Optional step: If you prefer to brown your chicken breasts before placing them in the slow cooker, heat a large skillet to medium-high and add one tablespoon of olive oil. Add chicken breasts and brown for about 3 -4 minutes per side. Using tongs, transfer the chicken breasts to the slow cooker. Alternatively, you can place chicken breasts in the middle in a single layer in the crockpot.
Then place diced red potatoes on one side of the chicken and the fresh green beans on the other side.
In a small bowl or glass measuring cup, combine the fresh lemon juice, olive oil, minced garlic, salt, pepper, oregano, onion powder, and garlic powder and whisk. Pour over the chicken and vegetables. Cook on low for 4 – 6 hours till the chicken is cooked through and potatoes are fork-tender and the beans are tender-crisp.
If desired, you can shred the chicken. I like to leave it whole but it is very tender and most likely will fall apart while taking out of the crockpot.
