Ham, Egg, and Cheese Breakfast Calzones

Mornings can be a struggle to fit in a good breakfast when everyone is busy getting ready for school and work.  It’s easy to just pour a bowl of cereal or grab a pack of pastries and go.  Not very filling and can get quite boring after a while.  That’s where this delicious breakfast recipe for Ham, Egg, and Cheese Breakfast Calzones comes into play.

Whether you enjoy this easy-to-make breakfast hot pocket by itself or with a delicious raspberry almond coffee smoothie or fresh fruit yogurt parfait, it’s a great way to start the day.

Ham, Egg, and Cheese Breakfast Calzones

The two best things I love about these Ham, Egg, and Cheese Breakfast Calzones are that they are filling AND portable. Another great feature of this hand-held breakfast meal is that you can make a double batch, let them cool, and freeze them.  

They’re easy to reheat in the microwave, air fryer, or oven.  They last in the refrigerator for about a week making it easy for everyone to grab one or two in the morning as you are heading out the door.

Now, I am not saying breakfast needs to be eaten on the go all the time, but reality does dictate that at times we run late! This is the perfect easy recipe to make to ensure everyone will get out the door with breakfast. After all, breakfast is the most important meal of the day!

Alternatively, you can make a batch of these for dinner and pair it with a nice salad.  Quick and easy dinner for busy nights.

What is a calzone?

A calzone is an Italian type of turnover, or folded-over sandwich that features pizza fillings such as ricotta, and often mozzarella and Parmesan, too, cured meats, vegetables, and herbs, then sealed and baked. For this recipe, the filling for the calzones is breakfast foods: scrambled eggs, cubes of ham, and a shredded cheddar cheese blend.

Why use frozen dinner rolls for breakfast calzones?

Making these breakfast calzones are extra easy using Rhodes Bread dough balls! The little balls of dough can be thawed on a plate for a couple hours or overnight in the refrigerator.  Rhodes Bread products make my life easy, especially when the family wants fresh bread or rolls with a meal.

Other Variations of Breakfast Calzones

If you don’t care for ham, there are many other options to fill the breakfast calzones with such as bacon or cooked sausage. Try these other variations too:

  • Vegetables – add sauteed onions, green pepper, or mushrooms.
  • Mexican – add green chilies or chopped jalapenos, salsa, and substitute sausage for the ham.
  • Hawaiian – omit the eggs and add pineapple (this one’s a favorite here).
  • Meat Lovers – add bacon or Canadian bacon, and sausage or turkey sausage
  • Cheese – any of your favorite melty cheeses will work. Mozzarella cheese, Colby Jack, Swiss, and cheddar are all delicious choices.

Ingredients

  • 6 Rhodes Dinner Rolls
  • 6 eggs
  • ¾ cup diced ham
  • ¾ cup shredded Mexican 4 cheese blend or your favorite shredded cheese
  • 1 egg beaten with 1 tsp water mixed in
  • optional: toppings such as chopped chives, Parmesan cheese, or parsley

How to Make Ham, Egg, and Cheese Breakfast Calzones

Step 1

Thaw the frozen dinner balls out on a baking sheet or plate. The beauty of this recipe is that you can make as many calzones as you need.  You can thaw the dough overnight in the refrigerator overnight or on a plate for a couple of hours.

Step 2

Preheat oven to 350 degrees. Prepare a baking sheet by lining it with parchment paper, a silicone baking mat, or spray with nonstick spray. On the prepared baking tray, roll or pat each thawed dough ball into a 5 – 6 inch circle.  Set aside.

Step 3

Scramble the eggs and allow them to cool for a few minutes.

Step 4

Divide the scrambled eggs into equal portions and spoon them onto half of each circle of dough.

Evenly divide the ham cubes and shredded cheese and spoon over the eggs on each piece of dough.

Step 6

Fold each piece of dough over and seal using your fingers or a fork.

Step 7

Brush the top of the dough with egg wash (one egg beaten with one teaspoon of water).

Step 8

Top each dough pocket with chopped parsley or chives. Bake for 15 minutes or until golden brown.

Step 9

Once the Breakfast Calzones are baked, let them cool for a moment before serving. If you are freezing them, allow them to cool on a wire rack completely first.

Tips, Tricks, and FAQs

  • If you can’t find the frozen rolls, you can easily use refrigerated pizza dough or even a can of jumbo biscuits.
  • Get creative and fill the calzones with your favorite breakfast foods.
  • Serve the breakfast calzones with salsa, marinara, or your favorite hot sauce.
  • To freeze baked calzones: cool completely, then place calzones on a baking sheet and freeze them for about 20 minutes. Remove them from the baking sheet and store them in a freezer bag for up to 3 months.

Instructions

  • Allow the Rhodes dough balls to thaw and rise according to package directions.
  • Preheat oven to 350 degrees and prepare baking sheet. Line baking sheet with a silicon mat, parchment paper or spray with non-stick spray.
  • Roll out or pat out the dough into circles about 5 inches in diameter.
  • Scramble the eggs as you normally would.
  • For each calzone, divide the scrambled eggs, ham, and cheese onto one half of each dough circle.
  • Fold other half of calzone over fillings and seal using your fingers.
  • Place on your prepared baking sheet and brush the tops of each calzone with the egg wash. Sprinkle your toppings on, if using.
  • Bake calzones for 15 minutes, or until golden brown.
  • Allow to cool a moment before serving. If freezing, cool completely before placing in freezer safe container.

  3. I still have some of the dinner rolls in the freezer and now I know what I’m making with them!

  4. I am so making a batch of these! I happen to have a package of the roll dough in my freezer and my guys are going to love these!

  5. Choose outfits for kids the night before, and lay them out to make getting dressed quick and easy. Set out lunchboxes or bags with any non-perishable foods in them.

    1. Yes! 370 degress F. for about 7-10 minutes, turning over halfway through cooking time.
