We love fajitas, and this one pan chicken fajita dinner is a staple recipe in our house, as are these slow cooker shredded steak fajitas. Often, I will make this one pan chicken fajita pasta or my chicken fajita rice skillet just to satisfy the carb lovers in the family. One pan or pot meals just make sense, and I love the easy clean up.

Fajitas are one of our favorites, and grilling or cooking them on the stove-top is the typical way to make them. But, baking chicken fajitas in the oven is effortless since you just toss all the ingredients on the baking pan and roast.  The oven does the work and roasting the meat and vegetables gives them a slightly charred edge and a sweetness that is just so good.

I stopped using the store-bought packaged fajita spice blends and made my own blend.  You probably already have all of the spices and herbs in your pantry.  My homemade fajita seasoning allows me to control the salt and adjust the amounts of the other spices to suit our taste buds.  A few family members like it SPICY, so I made a separate batch just for them.

I’ve listed the spice mix ingredients that you can use if you don’t have any of the homemade fajita seasoning on hand. If you do use the DIY mix, you will use between 4 – 5 tablespoons of the blend.

How to Make Easy Sheet Pan Chicken Fajitas

Preheat the Oven: Preheat your oven to 375 degrees. Line a rimmed baking sheet with parchment paper or spray with nonstick cooking spray. Set aside.

In a large bowl, combine the diced chicken, olive oil, paprika, garlic powder, onion powder, chili powder, oregano, cumin, salt, and pepper. Stir to coat the chicken. Add the minced garlic, sliced bell peppers, and onion, then mix everything until evenly coated.

Spread the seasoned chicken and veggies in a single layer on the sheet pan. Bake in the preheated oven for 30-35 minutes, or until the chicken is fully cooked and browned. Check for doneness, as cooking times may vary. Remove from the oven.
