Italian Chicken in the Crockpot

I was a bit skeptical about this recipe as I have not cooked with Italian dressing before, marinated, yes – but not cooked.  Glad I tried it! It turned out great!  I added some onions and used the vegetables I had on hand which were small potatoes and whole carrots that I sliced.  This is the site where I originally got the recipe and there are several great ones on there that I want to try too.
 
 

4 Boneless Skinless Chicken Breasts
16 Ounce Bottle of Italian Dressing (I used Roasted Red Pepper Italian Dressing)
1/2 Cup of Parmesan Cheese
Italian Seasoning to taste
1 1/2 lbs small white potatoes
3 – 4 carrots, peeled and sliced into 1-inch pieces
1 medium onion coarsely chopped

Spray crockpot with Pam (makes for easy cleanup)
Squirt a small amount of Italian dressing in the bottom of the crockpot to cover.
Place chicken breasts in crockpot.
Pour some of the Italian dressing on the chicken.
Sprinkle half of cheese onto the chicken.
Sprinkle Italian seasoning onto the chicken.
Add the onions, carrots and tomatoes.
Pour more of the Italian dressing on top of vegetables.
Sprinkle with rest of the cheese and more Italian seasoning.
Pour the remaining Italian dressing on the potatoes.
Cook on low for 6-8 hours.
