It’s Fall and the holidays are approaching, so this delicious and classic Rustic Apple Tart will appear more than once on our dessert menus. I love the smell of apple pie baking and this apple tart, also called an apple galette, has all the same flavors and smells so good while baking and takes minimal effort to make.

This rustic apple tart is so simple to make that it’s the perfect dessert to make on a whim or for any occasion. No special pie pan is needed, just a baking sheet, and your free-form apple pie is baked to perfection. So delicious that it tastes even better than a fancy rustic French apple tart from a bakery.

Easy Rustic Apple Tart

Like my Strawberry Tart, this recipe is a no-hassle simple one and starts with a store-bought refrigerated pie crust. You really can’t mess this recipe up. The filling is made from thinly sliced apples, flour, and sugar. That’s it. It’s called “rustic” because you will be folding the pie crust dough slightly over the apples in a free-form fashion. Once baked, a sweet glaze from apple jelly is brushed on to give it that perfect finish.

What are the Best Apples for a Rustic Apple Tart?

I used Gala apples in this recipe but it is also delicious with Granny Smith apples and Honeycrisp, too. You can use a combination of apples – pick your favorite baking ones. Fall is apple season and you will have a variety to choose from.

Can I Make this Apple Tart Ahead of Time?

Yes, you can make this apple tart ahead of time. You can let the tart chill in the fridge for up to a day before baking.  Just be sure to cover the apple tart with a piece of plastic wrap before storing it so that the crust doesn’t dry out.

Can you Freeze an Apple Gallete?

Yes. You can freeze an unbaked apple tart. Skip the melted butter part. Instead, place the unbaked tart on a lined baking tray and freeze until solid. Then wrap the frozen tart in parchment paper and place it into a ziplock freezer bag and press out the air. Freeze for up to 1 month. When ready to bake, brush the edges with the melted butter, sprinkle with 2 tablespoons of butter and bake from frozen. You’ll add a few additional minutes to the baking time. Once baked, brush the apple galette with the melted apple jelly.

  • 1 pie crust, 9 inch refrigerated pie crust
  • 4 gala apples
  • 4 1/2 tablespoons sugar, divided
  • 1 tablespoon flour
  • 2 tablespoons melted butter
  • 2 tablespoons apple jelly, melted

Step by Step Directions to Make a Rustic Apple Tart

Step 1

Take the pie crust from the refrigerator and allow it to come to room temperature before using. See package directions for time.

Step 2

Preheat the oven to 400 degrees. Line a baking sheet with parchment paper. Unroll the pie crust onto the prepared baking sheet. Set aside.

Step 3

Cut the apple in half, then cut into thin slices.

Step 4

In a small bowl, combine 2 tablespoons of sugar (save the rest of the sugar) with the flour, and stir well. Sprinkle over the pie crust.

Step 5

Arrange the apple slices onto the pie crust, starting 2-3 inches from the edge, then slightly overlapping. Repeat a second layer in the middle.

Step 6

Bring the edges of the pie crust up, to meet the apples, and cover the edges just slightly.

Step 7

Melt the butter, and brush it over the apples with a silicone brush or pastry brush. Then sprinkle the remaining sugar over the apples.

Step 8

Place the baking sheet on the center rack in the oven for 25-30 minutes, or until the apples are tender, and golden brown. Once the tart is removed from the oven, melt the jelly in a small bowl for about 30 seconds in the microwave, then brush over the apples. Serve warm, or allow to cool before serving.

Tips, Tricks, and FAQs

  • Drizzle a bit of caramel sauce over the apple tart once it’s baked.
  • Make this galette with other fruit like pears, peaches, or strawberries. Replace the apple jelly with another fruit jelly.
  • Most packages of premade pie crusts come in twos, so make two tarts!
  • Store leftover apple tart in the refrigerator for up to three days in an airtight container or wrapped with plastic wrap.
