Perfect Salad dressing for when you are trying to stay away from those creamy white dressings. The Dijon mustard gives it that zing that satisfies your taste buds.
2 tbsp red wine vinegar
1 tbsp finely chopped shallot
1 1/2 tsps Dijon mustard
2 tbsp extra virgin olive oil
1/8 tsp of kosher salt
1/8 tsp of freshly ground black pepper
Combine vinegar and shallot. Let stand 5 minutes. Whisk in mustard. Add oil in a thin, steady stream, whisking constantly until combined. Stir in salt and pepper.
Use immediately or cover and chill for up to 3 days before using. If chilled, let stand at room temperature for about 30 minutes and whisk before using.
Makes about 1/3 cup of dressing.
